Devon Distillery is the UK’s first and only micro distillery creating grape-marc-spirit, Dappa. Like it’s Italian counterpart ‘Grappa’, it’s a smooth after-dinner tipple with a beautifully warming effect.

They may originally be Italian drinks, but Dappa & DEVONCELLO are unmistakably British. Founded by Cosmo Caddy in December 2012, the first vintage of Dappa was completed in October 2013.


In 2017 Devon Distillery launched the UK’s first and only MOBILE GIN STILL, crafting unique gins on location for clients ranging from pubs and bars to hotels and venues as well as catering to weddings and events anywhere in the UK.

Providing small scale gin production to those that might otherwise not be able to manage the standard large volumes needed for bespoke production. Using their experience and quality ingredients to bring a truly unique tailored experience to all of their clients to ensure they receive a gin that they can be proud of. Making gin production accessible to all those that might like to be involved.

Devon Distillery despite still being young has a number of branches that are still all growing.

Firstly is their Devon Distillery brand portfolio:

Using a custom-designed, hand-crafted, and authentic Italian copper pot still, their expert distiller produces an after-dinner drink and cocktail tincture of exceptionally high quality, DAPPA. They follow a traditional Italian grappa recipe and the advice and guidance of seasoned experts from the Veneto region of Italy.

Using the Dappa as the traditional base they have developed their own DEVONCELLO. Devon’s answer to Limoncello.

Devon Distillery has chosen a process of distilling that is widely regarded to produce the best quality possible. The method concentrates on small batches, which allows for maximum control of the process, creating a final product that has heightened, refined and more defined flavours.

Dappa is made from the red grape skins that are a by-product of making red wine; these skins are known as pomace. During the red wine production, the skins are fermented with the juice to impart their flavours and colour.

The second branch of the business is their Still on the Move:

Using their custom produced still, Prosperity, on the back of Ginny, their 1973 T2 VW, to travel both the local area and around the UK to craft individual short runs of gin for clients looking to have their own gin. Quite often pubs or hotels are looking for a house gin that is actually made at the house!

Devon Distillery have made over 500 unique gins for customers. These have included the Royal Navy, distilling on the flight deck of the then flagship (a bottle was ceremonially presented to HM The Queen), local restaurants, venues and at gin festivals.

Devon Distillery always work with our customers to make sure they get exactly the gin they would like using only the best ingredients available.

They also have a smaller still called ‘Mac’ that is able to produce a number of gins at the same time as well as offering Gin and Rum Schools on the move.

Devon Distillery have launched their very own Devon Gin School that is Situated uniquely within the Cider Press Centre at Dartington, where they can entertain individuals and groups to learn about gin and the art of gin distilling while crafting their own individual bottle of gin.

And, Most recently they have launched the Devon Rum School following their love for converting old vehicles, they have taken a 1995 American blue bird School bus and created their very own Devon Rum School. Here customers are able to learn a little of the history of rum as well as taste and create their very own spiced rum.

Devon Distillery has continued its award winning ways having received Great Taste Stars for their Dappa and Dark Fire as well Gold Medals across the board at the Taste of the West awards in 2021.
